In a world…where the dishwasher was full and the protagonist was incapable of washing dishes by hand…One skillet. Fed them both.
Days.That’s right- one skillet, six ingredients, and a healthy, delicious meal for your family, friends, or random houseguests. Let’s cut to the trailer. Using Campbell’s Scampi Skillet Sauce from #CollectiveBias and leftover gluten-free rice penne, I made a comforting dish for an unusually rainy day in Hampshire County- a real #EasyPrepMeal. The sauce was great- it had minimal ingredients and a healthy dose of wine, which lent a nice sweetness to the dish.I started out by caramelizing onions with butter in a cast-iron skillet on high until they were soft and browned, then added this bonafide feral sausage to the mix until it, too, was browned. At this point, it was extremely aromatic.Your sausage need not be feral, but I highly recommend it.I cheated and used leftover pasta, but theoretically, you could cook a batch, though it would eliminate the efficiency of the one-skillet dish. Your call. I heated the pasta and poured half the skillet sauce in and mixed it around. I poured the other half in with the onion and boar mixture and let it simmer for about 15 minutes. After mixing in the pasta, I topped the dish with small mozzarella balls and roasted garlic, and broiled it for 15 minutes until the top was crispy. Topped with a drizzle of olive oil, lemon juice, and some parsley (arugula would be delicious, too!), it made for a hearty and tasty meal.The #skilletsauces come in a number of flavors, and Campbell’s also makes sauces for the slow cooker as well.
